  • ½ cup unsalted butter Softened for richness.
  • 1 cup granulated sugar Sweetness is key!
  • 1 large egg Gives the bars that soft, gooey goodness.
  • 1 tablespoon red food coloring Provides the vibrant red velvet effect.
  • 1 teaspoon vanilla extract Adds depth and a warm aroma.

For the Cream Cheese Frosting

  • ½ cup cream cheese Softened, adds irresistible creaminess.
  • 2 cups powdered sugar Makes the decadent frosting.
  • 1 tablespoon milk To make the frosting spreadable.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and grease a baking pan.
  • In a medium bowl, whisk together the flour, baking soda, and salt.
  • In a separate, large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  • Beat in the egg, red food coloring, and vanilla extract until blended smoothly.
  • Gradually add the dry ingredients to the buttery mixture, mixing until just combined.
  • Spread the thick batter evenly in the prepared pan.

Baking

  • Bake for 20 to 25 minutes until a toothpick inserted in the center comes out clean.
  • Allow to cool completely in the pan before frosting.

Frosting

  • Beat the softened cream cheese until it’s super smooth.
  • Gradually incorporate the powdered sugar and milk until you get a perfect spreadable consistency.
  • Spread the frosting generously over the cooled cookie bars and cut into squares.

Notes

For best results, use room temperature ingredients and don’t overmix the batter. Store in an airtight container in the fridge for up to a week. For a gluten-free option, substitute gluten-free flour.
