  • Gather all ingredients for easy cooking.

Cooking

  • Heat a large pot over medium heat, add oil, then sauté onion and garlic until soft (3-4 minutes).
  • Add sliced sausage and cook until browned (4-5 minutes).
  • Stir in diced potatoes and chicken broth; bring to a gentle boil.
  • Reduce heat to medium-low and simmer until potatoes are tender (about 15 minutes).
  • Stir in heavy cream and cheese (if using); let simmer for another 5-10 minutes, stirring occasionally.
  • Season with salt and pepper to taste and serve hot, garnished with parsley.

Notes

Leftovers can be stored in an airtight container for up to 3-4 days. Reheat on low heat and add a splash of broth if needed.
