Rub Cajun seasoning evenly over the chicken breasts.
Place the chicken in the slow cooker along with sliced bell peppers, onion, minced garlic, diced tomatoes (with juice), and chicken broth.
Cover and cook on low for 5-6 hours or on high for 2.5-3 hours, until the chicken is tender.
Remove the chicken from the slow cooker and shred with two forks.
