Ingredients
  

  • 1.5 lbs boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 1 small onion, sliced
  • 3 cloves garlic, minced
  • 14.5 oz diced tomatoes (undrained)
  • 1 cup chicken broth
  • 4 oz cream cheese, softened
  • 0.5 cup heavy cream
  • 8 oz penne or rotini pasta
  • 0.5 cup grated Parmesan cheese
  • to taste salt and pepper
  • for garnish fresh parsley or green onions

Instructions
 

  • Rub Cajun seasoning evenly over the chicken breasts.
  • Place the chicken in the slow cooker along with sliced bell peppers, onion, minced garlic, diced tomatoes (with juice), and chicken broth.
  • Cover and cook on low for 5-6 hours or on high for 2.5-3 hours, until the chicken is tender.
  • Remove the chicken from the slow cooker and shred with two forks.
  • Return shredded chicken to the slow cooker and stir in softened cream cheese and heavy cream until melted and well combined.
  • Cook pasta separately according to package instructions. Drain well.
  • Stir cooked pasta and grated Parmesan cheese into the slow cooker. Mix well and cook an additional 5-10 minutes to allow sauce to thicken slightly.
  • Season with salt and pepper to taste. Garnish with fresh parsley or green onions before serving.
