Ingredients
  

For the Cheese Puffs

  • 2 cups leftover mashed potatoes Can be freshly made but preferably use leftovers for better flavor.
  • 1 cup shredded cheddar cheese Sharp cheddar works great but feel free to explore other types.
  • 2 large eggs Make sure they are at room temperature.
  • 1/2 cup all-purpose flour Whole wheat flour can be used as an alternative.
  • 1 tsp salt Essential for flavor.
  • 1/2 tsp black pepper Add more to taste.
  • 1 tsp garlic powder Enhances flavor.
  • 1 cup breadcrumbs Panko for extra crunch is recommended.

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large mixing bowl, combine leftover mashed potatoes, shredded cheddar cheese, eggs, flour, salt, black pepper, and garlic powder. Mix until well combined but still chunky.
  • Shape the mixture into small balls, about the size of a golf ball.
  • Roll each ball in breadcrumbs until generously coated.
  • Line a baking sheet with parchment paper and place the coated balls on it, leaving space between each.
  • Bake for 20-25 minutes or until golden brown. Enjoy warm!

Notes

For best results, avoid using overly watery mashed potatoes and consider adding herbs or spices for variation. Store leftovers in an airtight container for up to three days.
