Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Add minced garlic and grated ginger; sauté for 1-2 minutes until fragrant.
  • Add chopped onion, sliced carrots, and sliced celery; cook until vegetables soften.
  • Pour in the chicken broth and bring to a boil.
  • Add shredded chicken to the pot.
  • Stir in egg noodles and let simmer according to package instructions.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with fresh parsley.

Notes

To keep noodles from becoming mushy, store leftovers with the noodles separate.
