  • 8 pieces chicken thighs (bone-in or boneless, skin-on optional) Juicy and full of flavor
  • 2 cloves garlic, thinly sliced Aromatic base for the sauce
  • 500 ml dry Riesling wine Adds acidity and depth; can substitute with chicken broth and lemon juice
  • 2 tablespoons unsalted butter For richness
  • 1 tablespoon olive oil Prevents butter from burning
  • 125 grams pancetta, sliced Brings salty and crunchy element; turkey bacon can be used as a substitute
  • 2 medium onions, sliced Sweet and savory
  • 250 grams mushrooms, sliced Cremini or button mushrooms recommended
  • 240 ml heavy cream Creates a creamy sauce
  • to taste salt and freshly ground black pepper Season well
  • optional fresh parsley For garnish

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, heat the butter and olive oil over medium heat.
  • Add the garlic and pancetta; sauté for about 2-3 minutes until the garlic turns golden and the pancetta becomes crispy.
  • Add the onions and mushrooms; cook for about 5-7 minutes until softened.
  • Place the chicken thighs in the skillet and pour in the Riesling; bring to a gentle boil, then reduce to a simmer for 20 minutes, turning the chicken halfway.
  • Stir in the heavy cream and continue to simmer for another 5 minutes.
  • Transfer the mixture to a baking dish and bake uncovered for 15 minutes.
  • Season with salt and pepper, garnish with parsley if desired, and serve hot.

Notes

For best results, sauté garlic and pancetta without rushing to enhance the flavors. Use a good quality Riesling for better taste. This dish is perfect for meal prep and can be frozen for up to three months.
