For the Caramel Drizzle

Instructions
 

Preparation

  • Whisk together flour, baking soda, cinnamon, nutmeg, and salt in a medium bowl and set aside.
  • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy for about 3-5 minutes.
  • Mix in eggs one at a time, then add vanilla extract until combined.
  • Gradually mix in dry ingredients until just combined.

Adding Apples and Caramel

  • Gently fold in chopped apples and caramel bits.
  • Cover with plastic wrap and chill in the refrigerator for at least 30 minutes.

Baking

  • Preheat the oven to 375°F (190°C).
  • Scoop tablespoons of dough onto prepared baking sheets, spaced about 2 inches apart.
  • Bake for 9-11 minutes until edges are golden brown and centers are set.
  • Cool on the baking sheet for a few minutes before transferring to a wire rack.

Making the Caramel Drizzle

  • In a small saucepan, combine heavy cream, corn syrup, sugar, butter, and salt over medium heat.
  • Stir constantly until sugar dissolves, then let it simmer for 5-7 minutes until thickened.
