  • 2 lbs beef chuck roast Heavily marbled for melt-in-your-mouth texture.
  • 2 cups beef broth For rich flavor.
  • 1 large onion, chopped Adds sweetness and aroma.
  • 4 cloves garlic, minced Essential for flavor.
  • 3 dried guajillo chilis Smoky and slightly sweet.
  • 2 dried ancho chilis Adds smooth and earthy notes.

Spices

  • 1 tsp cumin For warm, nutty flavor.
  • 1 tsp oregano Adds herbal freshness.
  • to taste Salt and pepper Season to taste.

For Serving

  • as needed Corn tortillas Fresh corn tortillas recommended.
  • to garnish Chopped onions and cilantro For freshness.

Instructions
 

Preparation

  • Soak the dried guajillo and ancho chilis in hot water for about 15 minutes, then drain.
  • In a blender, combine the soaked chilis, beef broth, chopped onion, garlic, cumin, oregano, salt, and pepper. Blend until smooth.

Cooking

  • Place the beef chuck roast in a Crock Pot and pour the chili sauce over it.
  • Cook on low for 8 hours or high for 4 hours, until the beef is fork-tender.

Assembly

  • Shred the cooked beef using two forks.
  • Serve the shredded beef in warmed corn tortillas, garnished with chopped onions and cilantro.
  • Ensure to dip the tacos into the leftover consomé before eating.

Notes

Use good quality meat and fresh spices for the best results. Let the beef rest after cooking for juiciness. Feel free to add chipotle chilis for extra spice.
