  • 8 oz pasta (penne or farfalle) Great for holding sauce.
  • 1 lb chicken breast, diced Can substitute with shrimp or tofu.
  • 1 bell pepper, sliced Red or yellow for sweetness.
  • 1 onion, sliced Sweet onions work best.
  • 2 tbsp olive oil For sautéing.
  • 1 cup cream Use heavy cream for richness.
  • 1 cup shredded cheese Cheddar or Mexican blend.
  • 1 packet fajita seasoning Convenient, but homemade works too.
  • to taste salt and pepper Seasoning to preference.
  • fresh cilantro (for garnish) Optional.

Preparation

  • Cook the Pasta: Boil water in a large pot, add salt, and cook pasta to al dente according to package instructions. Drain and set aside.
  • Heat the Skillet: In a large skillet, drizzle olive oil and heat on medium-high until sizzling.
  • Cook the Chicken: Add diced chicken to the skillet and sprinkle with fajita seasoning. Cook until no longer pink and golden edges form.
  • Add Veggies: Stir in sliced bell pepper and onion. Cook for 4-5 minutes until softened.
  • Create a Creamy Sauce: Lower the heat, stir in cream and cheese until melted and creamy.
  • Combine with Pasta: Add drained pasta to the skillet and stir until coated with the sauce.
  • Season to Taste: Adjust seasoning with salt and pepper as needed.
  • Garnish and Serve: Serve in bowls, garnish with fresh cilantro, and enjoy!

Notes

Store leftovers in an airtight container for 3-4 days. Reheat gently on the stove with a splash of cream or water to loosen.
